No Dye Green Scrambled Eggs


​ March 2nd is Dr. Seuss's birthday and many schools and organizations will be celebrating. I know many places like to do a version of green eggs and ham but I have never been a fan of adding green dye  to make them green. Here is what I came up with at the last minute this very morning March 2nd.


Things you will need

  • ​Avocado
  • 4 Eggs
  • 4 TBSP of Milk

First you will mash the avocado the best that you can, I still had some lumps in mine. A food processor may work best  but I just used a fork. You will now add the eggs and milk to the mashed avocado and whisk until well blended. Now you cook them how you usually cook your scrambled eggs and they will be green but not bright green of course.
